Raw Materials

Fermentation

Solid-state fermentation in mud-lined pits — a hybrid approach. The pits are lined with mud but renewed annually (unlike Sichuan pits which are never cleaned). This creates a lighter pit character than strong-aroma.

Aging

Aged in special 'wine seas' (酒海) — large wicker baskets lined with layers of mulberry paper, egg white, and animal blood, sealed with beeswax. This unique aging vessel gives Xifeng its distinctive nutty-honey character.

Medium body. Sweet honey and fruit open, followed by roasted grain and a gentle warming spice. The phoenix-aroma balance is apparent — cleaner than strong-aroma, richer than light-aroma. 55% ABV in the classic green bottle brings substantial heat; the Red Xifeng at 52% is more integrated.
